Since 1920, our unagi restaurant

has been conveniently located just three-minutes

walk from Matsumoto Castle in Matsumoto City,

Nagano Prefecture, Japan.

The “Unagi Sasa-Mushi” invented

by Muneo Sawada, the third owner,

became famous when it was served to Hirohito,

the Emperor of Showa,

making it a hit product nationwide.

The creative cuisine of unagi,

a combination of “tradition” and “innovation”

has been passed down to the present day.

Putting our souls into processing.

Live unagi is processed with precision and care.

The outstanding technique is said to “take eight years to master processing, three years for skewering, and a lifetime for grilling”.

Our craftsman's skillful unagi handling, cultivated over many years, is evidence of the technique.

The backbone, fins, and small bones are removed cleanly, and finally, incisions are made to be plumped when the unagi is grilled.

Preparation is carefully done one slice at a time.

Our unagi craftsman has dedicated 30 years to hand-grilling unagi.

He carefully skewers unagi one by one and grills them over a binchotan charcoal flame with a secret sauce that has been handed down from generation to generation.

By working out how the unagi will contract when grilled, the skewers are threaded through the unagi so that it stays beautifully straight. The skewers are also threaded during grilling to achieve a perfect finish that cannot be obtained with machine skewering.

The grilling process is finished over a high heat, while keeping some distance from the flame to make the skin crispy and the inside plump.

Kabayaki that our unagi craftsman has grilled one skewer at a time using our secret sauce is rolled up with glutinous rice produced in Azumino and bamboo grass leaves.

The glutinous rice is seasoned with just the right amount of sauce, and the aroma of bamboo grass highlights the umami (pleasant and savory taste) of rich natural flavors.

To bring out the delicate flavor of unagi, we adhere to “cooking by hand” and our unagi craftsman takes great care in preparing each dish.
